Aria

"Aria" is not an ice wine, but it's made in an ice wine style. It's actually more akin to a Sauternes or an Australian "sticky" but those are wines people are less familiar with.
A true "ice wine" is made by allowing the grapes to freeze in the vineyard so that they can be picked and pressed while they are still below 15 degrees Fahrenheit. That isn't feasible for us here, so we pick the fruit and freeze the juice, concentrating it in the process. This makes for a highly sweet juice that finishes fermentation with a lot of sweetness.
Aria is fermented in neutral French oak barrels and aged a little over a year. Because of its sweetness and acidity, this is a wine that could actually cellar for a pretty long while. It's meant to go with desserts....or just be dessert. My favorite pairing with this type of wine is creme brulee.
